About

American biscuits are a quick bread: cold fat in flour, buttermilk, a hot oven. The gravy is milk thickened with the sausage drippings. If you make scones and pour stew on them you made a different breakfast.

    Rub butter into 250g flour and salt, add buttermilk, pat 2cm thick, cut. Bake at 220°C 12–15 minutes.

    Fry sausage, stir in 50g flour, then the remaining milk. Pepper. Simmer thick. Split biscuits, drown.
