Gyeran-mari is eggs rolled in layers in a square or rectangular pan until you have a log you can slice. The filling is usually minced spring onion and carrot, sometimes cheese or gim. It should be tender, not browned like a British omelette. Slice it to show the spiral.

    Beat eggs with salt, spring onion and carrot. Do not add milk if you want a tight roll.

    Lightly oil a pan over medium-low. Pour a thin layer, cook until just set, roll to one side. Pour more egg, lift the roll so the new egg flows under, roll again. Repeat.

    Rest 1 minute, slice into even rounds.
