About
Horiatiki is not a chopped 'Greek salad' with iceberg and a crumble. It is large pieces of ripe tomato, cucumber, onion, a slab of feta, olives, oregano and enough oil to make bread necessary. No lettuce in the old taverna version.
Ingredients
Scaling multiplies the written quantities. Baking still prefers a scale.
Steps
Step 1
Cut tomato and cucumber into large chunks. Slice onion thin. Arrange, put the feta on as a slab, olives, oregano, oil, salt.

Substitutions
Feta → A salty fresh cheese
Wrong, still a tomato plate.
Tips
- Pepperoncinis are a taverna extra.
- Do not crumble the feta into snow unless you like that.
History & culture
Summer tables. Winter tomatoes make a sad plate — say so and wait.
Tomato is recent in Greece. The named taverna salad is 20th-century. Still worth making well.
