About

Massaman Beef curry is listed as beef from Thailand. The steps below are the imported TheMealDB method, not an editorial rewrite. Times shown were read from those steps.

Ingredients

Scaling multiplies the written quantities. Baking still prefers a scale.

Steps

  1. Step 1

Heat oven to 200C/180C fan/gas 6, then roast the peanuts on a baking tray for 5 mins until golden brown. When cool enough to handle, roughly chop.

    5 min
  2. Step 2

Reduce oven to 180C/160C fan/gas 4. Heat 2 tbsp coconut cream in a large casserole dish with a lid.

  3. Step 3

Add the curry paste and fry for 1 min, then stir in the beef and fry until well coated and sealed. Stir in the rest of the coconut with half a can of water, the potatoes, onion, lime leaves, cinnamon, tamarind, sugar, fish sauce and most of the peanuts.

    1 min
  4. Step 4

Bring to a simmer, then cover and cook for 2 hrs in the oven until the beef is tender. Sprinkle with sliced chilli and the remaining peanuts, then serve straight from the dish with jasmine rice.

Substitutions

  • beef tofu

Marinated tofu or mushrooms can take the savoury role. Label the plate as a vegetarian adaptation.

  • potato (sweet potato or another starchy side) sweet potato or another starchy side

Cook time changes. Sweet potato browns faster.

  • onion shallot

Shallots are sweeter. Use the same volume, or a little extra onion if that is what you have.

  • lime lemon

Works in most savoury cooking. Desserts may notice.

  • fish-sauce (soy sauce + lime) soy sauce + lime

Salty and bright, not funky. A mashed anchovy is closer if fish is acceptable.

  • chilli (paprika or chilli flakes) paprika or chilli flakes

Paprika is milder and sweeter. Add cayenne if you still want heat.
