About
Alla Norma is fried (or roasted) eggplant folded through a tomato sauce, with basil and a snow of ricotta salata. The eggplant should taste of itself, not oil. If you only have fresh ricotta, dry it a little and salt it — not the same, still a plate.
Ingredients
Scaling multiplies the written quantities. Baking still prefers a scale.
Steps
Step 1
Salt eggplant cubes 15 minutes, squeeze. Fry or roast in oil until gold. Drain on paper.
20 minStep 2
Make a simple tomato sauce with garlic and oil, 12 minutes. Fold in most of the eggplant.
12 minStep 3
Toss pasta, basil, remaining eggplant, grated cheese.
