About

Alla Norma is fried (or roasted) eggplant folded through a tomato sauce, with basil and a snow of ricotta salata. The eggplant should taste of itself, not oil. If you only have fresh ricotta, dry it a little and salt it — not the same, still a plate.

    Salt eggplant cubes 15 minutes, squeeze. Fry or roast in oil until gold. Drain on paper.
