About

Spanakopita is wilted, squeezed spinach with feta, onion and dill, layered in oiled phyllo. Water in the filling is how you get a steamed soggy centre. Squares or a tray. Shop phyllo is how homes do it.

Steps

    Wilt spinach, cool, squeeze until it is almost dry. Mix with crumbled feta, onion, dill, eggs and a little salt.

    Oil a tray. Layer half the phyllo, oiling each sheet. Filling. Remaining phyllo. Score. Bake at 180°C 35–40 minutes until gold.
