About
Sundubu is extra-soft tofu that barely holds a cube. The broth is gochugaru and stock, sometimes clams or pork, always served boiling. You break an egg into it at the table. If your tofu is firm, you have made a different jjigae — still good, not this.
Ingredients
- Tofu, silken or extra-soft sundubu400 g
- Gochugaru30 ml
- Gochujang (optional)4.9 ml
- Garlic3 clove
- Soy sauce15 ml
- Toasted sesame oil15 ml
- Zucchini, half-moons½
- Onion½
- Spring onion2
- Egg2 large
- Prawn (optional)100 g
- Pork, mince or thin slices (optional)80 g
- Water, or anchovy-kelp stock400 ml
- Rice, uncooked, to serve200 g
Scaling multiplies the written quantities. Baking still prefers a scale.
Steps
Step 1
Bloom gochugaru and garlic in sesame oil over medium heat 30 seconds. Add pork if using and stir until it loses raw colour.

Add stock, soy, gochujang, onion and zucchini. Boil 5 minutes.
5 minStep 3
Slide in the soft tofu in large spoonfuls. Add prawns. Return to a hard boil 3–4 minutes. Do not stir into mush.

Crack eggs on top, scatter spring onion, and take the pot to the table still bubbling.
